And yeah, had a freaking blast. Had to cancel the offshore kayak trip because wind got up to 20 knots on the day I was scheduled, but also did an offshore trip on a 54' Hatteras and killed the MahiMahi.
Made some killer mahi mahi nuggets...trimmed out the center bones from the fillets and trimmed em up real good...cut into 2" X 1" X 1" cubes...quick dip in egg and rolled in 1/2 y bread crumbs and 1/2 fresh shredded parmesan cheese...then sauteed in olive oil/butter. Served with oriental veggies.
It kicked ass.
When in Mexico you give the fish to the resort...Only so much fish one can eat on vacation…What does one do with a bunch of Mahi Mahi in Hawaii?
Did pick up a couple more hours flying a sailplane on the North Shore. That was freaking amazing. First time I've soared a wave lift off a mountain range, and being right there on the coast with turquoise water and surf, sand, then mountains...there were times I was at 2000' but my wingtip was only 75' over the mountain ridges. Lift was spotty but there...I could have stayed up all day if I wanted to. That has to be the best place in the world to soar.

When I go fishing I always take an ice chest as one piece of luggage and close it with a ratchet strap. I took a BBQ brisket and pulled pork for snacks and sandwiches while we were there. I kept about 40# of mahi fillets, cooked about 15# there (cooking for 12 people) and brought the rest back frozen. The cargo holds aren't pressurized and are freezing so it's not a problem. Going to cook more this week.
