My HTC phones will get JB in January, but I see all those cool JB ROMS in XDA and I want to try one of them
At the same time, Im not sure its worth the hassle, since one of the reason I diteched IOS for Android is the customization out of the box

I'm not going to do it until I can upgrade from my razor maxx to the maxx hd. Since I've never done it before, I want to do it on an old phone so it doesn't matter whether or not I it up
I take it like "ignorance is bliss" kinda thing. I've heard tons of stuff can be done when you root. But I haven't seen it first hand on my own phone so eh. I feel like I'm not missing much....even though I probably am.

anium backup alone is worth rooting for. Not to mention bluetooth PS3 controller connection. Rooting is freaking awesome, there's no reason NOT to root your phone. Bricking is not a risk these days with any reputable build.
Rooting is extremely easy these days. For a lot of phones, they have a computer app, where you simply plug your phone into your computer, and run the command prompt on your computer and select what you want (root, flash a recovery, flash a rom, etc...) and it automatically does it for you. Super easy.
To brick your phone, you pretty much have to go wayyyyy out of your way to do so. If you make a small mistake in the normal process of rooting or flashing something, its almost certainly not going to brick your phone, you just have to do it over again.
Getting Cyanogenmod or MIUI is worth rooting. Both are infinitely faster/better/more customizable than the stock rom. You will not be disappointed after you flash one of those roms. Cyanogenmod is pretty much android in its purest form, while MIUI basically combines the better elements of both iOS and Android into one package. Cyanogenmod is generally a bit more stable though, but MIUI is a very pretty looking and intuitive rom with IMO the best music app available. I know you (lefty) liked iOS for quite a while, so you may enjoy MIUI.

I have a stupid question though:
I'm interested in pure JB roms (or their dark/black variations), but it seems that the stock JB Camera app replaces the Sense 4.0 camera; is there a way to flash a pure JB ROM while keeping the stock Camera app ?

I understand what you are saying, and I am not going to try to convince you otherwise, but when you actually do go ahead and root, you are going to come back to this comment and laugh at yourself.
As long as the .apk file for the sense camera is available, yes its possible.
Possible, yes. Probable, absolutely not. In fact, I have had nothing but HTC phones as smartphones and I have not ever seen anyone find a workaround for a using a Sense app with a non-sense framework.
I find it hard to believe there isn't a third party app better than the Sense one.
