However, I still have reservations with the entire premise of the theory of Evolution. For instance, how could an object as complicated as the human brain can originate from a single photon of light at the start of the Universe. In 15 billion years, you can create the human brain from a single photon of light and that all happened 'randomly'.

the theory of evolution (at least in regards to life on earth) is independent from the big bang theory. the theory of evolution is that life on earth has a common ancestor. how that first life got there is also separate from the theory of evolution.

could have landed on earth from a meteor, could have formed on earth (abiogenesis), could have been planted by a creator... that's all a different discussion

as long as you don't look at it like a "eureka! new species!" moment, it makes more sense.
