The key to a really good brisket, aside from length of time to smoke, is making sure there is plenty of humidity. What I like to do is this, leave a pan of beans under the brisket as it smokes. The drippings from the brisket will end up in the beans. This will flavor your beans as the brisket cooks. Also, in the firebox, I will leave a tin can full of water or beer going and refill it as it evaporates. This will keep the humidity up and help the brisket from getting dry.
I have yet to make a dry brisket. Shoot, after letting it rest for an hour or two, you cut into that beast and it is still dripping like a that wants the D.
