I've always liked the Treehouse of Horror ones. Epescially the one where Burns is a vampire and Homer gets sent to with Donuts.
The one where Homer sued the church and became the owner and then God flooded it.

Any of the "Treehouse of Horror" episodes are great.
The one where Homer makes the fake donation to PBS, tehy all chase him, he claims sanctary in the church and is sent overseas on the missionary trip. But only becuase of the line..."Save me Jebus!!!"
Also the Stonecutters is damn funny as well.
Episode with Burns' Casino and Marge's gambling addiction is one of my very favorites.
As is the episode with the Guatemalan insanity pepper (picked from an insane asylum deep in the jungle primeval).
I love the Sideshow Bob episodes in general, but am particularly fond of the Cape Fear spoof.
And who can forget "Oh Streetcar!"?
Again, way too many to list.
any of the treehouse of horror episodes before the show went to around season 7 or 8, but especially the one which has citzen kang:
"i'm gonna vote third party!"

In the Bleeding Gums episdoe. I loved how all of James Earl Jones characters came with bleeding gums in the cloud. Mufasa, Vader and THIS IS CNN.

I love the episode where Lisa gives Ralph Wiggum a Valentine and it reads, "I Cho Cho Choose you." And he invites her to the Krusty the Clown Anniversary Show and he tells everybody, live on tv, that he loves Lisa Simpson. She blows up and says she doesn't like him and his little heart breaks and Bart recorded it and keeps playing back that part for her.
not a big Simpsons fan, but that one is my favorite.

The Babysitter Bandit
The one where bart has to repeat the 4th grade and he can't remeber the name of the stupid pirate (long jihn silver)....and his son tells him the answer and they both get detention.
King Size Homer.....Homer purposely gains enough weight to go on disability so he can work at home.
The christmas episode were they got Santa's Little Helper.....if he runs away he'll be easy to catch!!
The one where Bart pulls the prank of Timmy O'toole falling down the well.
The one were Homer finds out he has a rich Half-brother Herb....who owns a car company and Homer ruins it with his "creation".
Any of the episodes were side-show bob tries to kill Bart.
The treehouse of horror where Ned gets poweres to envision peoples deaths.
forgot about the rear window episode when bart breaks his leg.
