The best hikes I've ever went on were in Colorado. When you go to the national parks where everyone else is, and if you are in reasonably good shape (which means if you are from Texas, you can't) and you can manage a good 7 or 8 miles, the tourists fade away and you end up in some of the prettiest country you've ever seen. The views are fantastic and you can drink the water coming out of the rocks.
