    the vertical shelf is for smoking. i would imagine the pit is stationary when in use.

    But as smoking meat can sometimes take 12-24 hours, or even longer, what's the purpose of bringing such a machine to someone else's house for a party if the food won't be ready on time? (assuming that this is the purpose of creating such a trailer)

    You can park the pit overnight whereever you're going to have the party and start the food at night. You can have a big family party at the park or anyplace. Not everyone has the equipment to host a big barbecue; this is portable.

    Slightly off-topic, but this reminds me of the guys who drove one of these from Texas to New York after 9/11 and fed the volunteers and firefighters and people who were cleaning up the mess and looking for bodies.

    Those are thermometers, so you can have side slightly hotter than the other.

    You know how I know I've lived in Texas all my life? It really boggles my mind that there are people who aren't sure what this is, and more mind-boggling, don't understand why we'd want one.

    hahaha... we do have BBQ in Mauritius, but that's usually out of a half metal barrel. The below image is as an *extremely* souped up version of what we use



    So going from that barrel to the Bat Tank posted above is quite a stretch in understanding

    the wood goes in the smoke box out back, and most cooking is indirect, esp with the smoker part.

    Traditionally the idea of dual thermometers is to monitor each side of the pit to ensure consistency.
