mmmmm...some grilled lengua with jalapeno pico finished with some El Yucateca on fresh flower tortillas...yum.
Carnitas with some onion and either El Yucateco green or a salsa made with roasted arbol, roasted garlic, and onion is the in either a corn or flour tortilla. Either that or some machacado a la mexicana (e.g., with jalapeno, onion, and tomato) in a flour tortilla with a green salsa made from roasted serrano, roasted tomatillo, roasted garlic, and onion.

I have a buddy who is a real country type guy, hunts, never buys his own meat, etc. and he decided to try making carnitas with pork shoulder from a hog he shot and when it was done, there was just something missing. I tried it and after thinking for a while, it just tasted like some comino would do it wonders. I told him this and he said "what is comino?" WTF? the dude was 24 at the time. I told him " in" and he had no idea. Couldn't believe it. I went home and grabbed some brought it over and it was the perfect additive.
How can you live in Texas and not know what comino is (sure he was from houston but come on)?
Also, yes I realize that the paragraph is rife with opportunity to make jokes.
in is awesome; I can't see why people don't generally put it in burgers, as it's great for them. I have to admit I don't use it on carnitas though. A flavorful olive oil for frying it once it has been shredded, some citrus to squeeze on it, fresh diced onions, and a really good salsa and tortillas are what make the dish for me. I know the Mexican way is to cook it in back fat instead of water and then olive oil, but I'd like to live past 50 tbh.
