I think I'll pass on the EVs for now because of how annoying it is to find a charger as well as the drying up of free charging. So now you pay half or more what you would be paying for gas, for the electricity. Hard to see a payback in that scenario.

I had a couple hybrids (2012 Camry, 2017 Accord) and LOVED them. Hybrids often have only a $2000 or so premium nowadays which is not bad. If you were in the market for an SUV, the Highlander getting 35 MPG overall is very impressive for that size vehicle. The Camry hybrid gets even more amazing mileage now than when I owned one. The Accord hybrid has gotten worse, curiously, perhaps by as much as 5 MPG. Maybe Toyota revoked their licensing to Honda or some such. I believe many automakers licensed lesser hybrid technology from Toyota, who continues to have the best.
These days the better hybrids are the best overall choice, see Toyota RAV 4 Prime. Toyota dealers can be hard to work with on price, I'm into the Subaru SUVs actually, these days. Telluride has fallen off, largely due to reliability issues.
Edit: I think I'd go PHEV, that seems like the best happy medium for now to me.

The regular highlanders look like they get 29mpg hwy. Not sure what msrp has been on them but in the past when I've done the math, it never added up to any savings to get a hybrid. I may look into it now though and see.

Well of course it all depends, the highlander hybrid is going to shine the most in MPG gain for in town driving. Someone driving mostly all highway miles can argue against the payback more easily. I drove plenty of highway miles and was still super pleased with the hybrids I owned. But, I typically only own the very best so your "mileage" can vary. (hehe)
I use the consumer reports testing to gauge what kind of real-world MPG I can expect.
