When you have a parrilla over there, are you allowed to go straight to eating steak, or do you have to eat your share of other grilled cow organs first before they'll let you?

Usually internal cow organs are done faster, thats why they are served before.
If you don't like them (I don't) you can eat a salad, fries, bread or whatever in the meantime.
In Mexico mollejas are popular.

If you don't eat a choripan (chorizo in a sandwich) you are not allowed to eat anything else and you are deported back to the US.
