I like using boudan and queso fresco but almost anything will work. Think some kind of sausage, cheese and herbs/seasonings. When fresh hatch peppers are in season (next month) I like using roasted hatch peppers and cheese like mozzarella.
i have 2 pork tenderloins...going to smoke this weekend...never stuffed one before...i need tips on what to stuff it with

all the receipes i come across are using apple or something...i bought some boudan, do you just take it out of the casing and mix it up with the queso fresco...damn that seems pretty simple
Yeah...butterfly the loin, a layer of crumbled boudan and a layer of sliced queso fresco. you can throw in some spinach for color if you want to.

Get a bowl and mix in bacon bits, onion, fresh baby spinach, diced V&V sausage, raw sugar, good amount of cream cheese, jalapeno's, salt & pepper.
