Palo Duro Canyon is nice if your girl is dead set on Amarillo.
Yeah, West Texas is by far the best part of the state with great hiking in Big Bend and the darkest night sky in the lower 48 states of the US. If you time it right they allow you to look through 36" research telescopes at the McDonald Observatory near Alpine for a lousy $9 admission fee to the star parties.

If you go to the Austin area then hit up all those small towns. I say go to Lockhart.

Anything downtown Houston. Or Kemah. Nasa is just about overdone as the Alamo but it's there. Moody Gardens in Galveston. Houston Improv.
Lockhart has badass bbq, but what else can you do there? I always just pick up my brisket and sausage and drive back to SA.
Don't bother with Amarillo or RGV on your first trip. Too little return for too much driving.You will get tremendous diversity driving south from Dallas on either side of 35. You can plan all kinds of side trips to little places in the hill country or central Texas. East Texas can go itself. Weather on the coast is still pretty ty but a must if you like seafood.

Yeah go to Lockhart and Taylor for BBQ. Agree with DPG about the Dallas World Aquarium. If you feel touristy visit the spot on Elm where JFK got it through his head that we didn't want him in Texas.
Just sayin' if they are going to be in that area they should pass through there. THE spot for BBQ. Real BBQ. Texas BBQ.

That would be sick. It's crazy how under utilized the Guadalupe is in Victoria. You'd never knew it ran right through Victoria unless you lived there.

The hiking in the Big Bend area is awesome, the night sky where you can see the arm of the Milky Way and see stars down to magnitude +7 with the naked eye is pretty cool, the humidity is low. But yeah, the air coming up from Mexico can get pretty nasty near the border sometimes.
google the pump house (no ). that's what they've been doing to a high degree of success. i think they're trying to get other private businesses in there to use their model.
I love Big Bend. Also love the Davis Mountains. I'm considering going to live there.

Rodeo should still be going down in SA. Might be worth hitting up too, but I've never been to any other rodeo so for all I know it's like any other.
It hasn't been mentioned yet but if you wanna see old school Texas hit up Bandera. Its close enough to Kerrville and Fredericksburg that you can hit up all three in a few hours.
All that is nothing compared to the old school Texas you can find at Cosmic Cowboy's place.
