According to Census data, there are only six civilian occupations in America that are majority immigrant (and even then, just barely) and there are no occupations in America that are majority illegal immigrant. Furthermore, only 5% of illegals even work in agriculture.

Native-born Americans of all races are willing to do jobs that are far filthier and more dangerous than picking fruit. When ing coal-mining has an overwhelming majority of native-born employees, there really is no job Americans won't do.

I'm not sure about other fruit categories but they crew's we hire to pick our ranches are easily making double the California minimum wage. They are paid by the bin so if they are young, fit, and motivated they can make quite a bit more than double the minimum wage.

I forget where I read it, but I saw an article once that went into how the "jobs Americans won't do" talking point wasn't even a thing until the 1950s, when farmers were grasping for any excuse to keep the Bracero program in place.
